Add a bottle of locally produced rosé from Clyde Park Vineyard.
Sourced from the Clyde Park vineyard, this Rosé is a blend of three blocks of Pinot Noir. The three blocks offer different aspect, clone and microclimate which in turn leads to a Rosé that shows complexity and finesse.
The vines offer a consistent and moderate yield of approximately 2 tonnes to the acre. Hands on viticulture, extensive use of green inputs - composting, winter cover crops, under vine mulch - mechanical weeding, no pesticides and limited (if any) irrigation.
Skin contact for a few hours before the grapes were pressed to tank. The juice was fermented at a cool temperature to retain aromatics and elegance. The wine was stored in old French oak for 3 months.
Bright light crimson in colour. Delicate perfume of rose petals, light summer berries and hints of savoury. The palate is elegantly spiced with a finish that is long fine and bright.
